Wet, wet, wet.

For Char Kway Teow fans who are used to a particular darker and smoky style, then this may just throw you off.

Apollo Fresh Cockle Fried Kway Teow is one of the star stalls of Marina Parade Food Centre.

Regulars who grew up eating this hawker dish would heave a sigh of relief then it has returned after the revamp (because some of the old-time stalls didn’t come back.)

The Fried Kway Teow ($4, $5, $6) is quite unlike any others you would find in Singapore.

It is known to be WET, though this current version I had was not as wet as how I remembered it to be.

The other thing I missed were the iconic green plates. Apparently, all the hawker stalls have to use the same style of utensils issued.

Ingredients added include fishcake, lup cheong (Chinese sausages), cockles and crunchy pork lard.

As for other differences, you would find more garlic, and some of the blood of the cockles are added during the frying process supposedly.

I found that rice noodles were paler than usual, without the strong sweet dark sauce, fried with garlicky notes.

In fact, you would find the texture soft and almost mushy, then it may remind you of fried horfun.

The egg was cooked till almost disintegrated into the dish, thus you won’t find bigger pieces of them.

Love or or hate it? Char Kway Teow which is moist, on the sweet side, garlicky, with a kick of the chilli. Tell uncle “shao la”.
